Keynote Address:

“The raw truth about cheese safety.”

Dr. Catherine Donnelly from the University of Vermont will be leading us in a discussion about the regulation of Raw Milk Cheese. This should be an interesting discussion full of food for thought.

Cheese is a food which has enjoyed a long history of microbiological safety. However, due to the globalization of the food industry, governments around the world are increasingly requiring assurance of cheese safety. While many recognize the safety of traditional cheeses manufactured from raw milk, others are demanding pasteurization of all milk intended for cheese making. But do cheeses made from pasteurized milk really pose less of a microbiological risk than raw milk cheeses? This presentation will explore this complex topic

Join us for a Beer & Cheese Tutored Tasting hosted by Ralph Morana, owner Bar Volo. Yes that’s right Beer & Cheese: they seem like an unlikely pairing to some, but to a tutored palate they can be a match made in heaven. Ralph will lead us on this angelic exploration of his favourite subject; pairing Artisan Beer & Cheese.
